1Cut the potatoes into chips, toss with the cooking oil and a little salt, then air fry at 200C for 18-20 minutes, shaking halfway, until golden and crisp.

2Meanwhile finely slice the peppers, onion and garlic.

3Fry the peppers, onion and garlic in a dry hot pan or wok for 3-4 minutes until softened and lightly charred.

4Tip in the cooked chips and toss with the salt, pepper and five spice until everything is well coated.

5Scatter over the sliced spring onion and serve straight away while crisp.
