    Cut the potatoes into chips, toss with the cooking oil and a little salt, then air fry at 200C for 18-20 minutes, shaking halfway, until golden and crisp.

    Meanwhile finely slice the peppers, onion and garlic.
  3. 3
    Fry the peppers, onion and garlic in a dry hot pan or wok for 3-4 minutes until softened and lightly charred.

    Tip in the cooked chips and toss with the salt, pepper and five spice until everything is well coated.
  5. 5
    Scatter over the sliced spring onion and serve straight away while crisp.
