The recipe

    Slice the pork thinly and mix with the crushed garlic, 1 tablespoon of the fish sauce and half the sugar. Leave for 10 minutes.

    Make the dressing by stirring the remaining fish sauce and sugar with the lime juice and a few spoons of warm water until the sugar dissolves.

    Cook the noodles in boiling water, drain, rinse under cold water and divide between bowls.

    Heat the oil in a frying pan over a high heat and fry the pork for 4-5 minutes until caramelised and cooked through.
  5. 5
    Top the noodles with shredded lettuce, sliced cucumber, grated carrot, torn mint and the hot pork, then spoon the dressing over.
