Instructions

Chop all vegetables into small cubes.

Sauté the onion, carrots, and celery in a large pot for 5 minutes.

Add the potato, lentils, tomatoes, stock, and spices.

Bring to a boil, then reduce heat and simmer for 30 minutes.

Stir occasionally and add more water if too thick.
