The recipe

    Peel and dice the potato into 2cm chunks and set aside.
  2. 2
    Soften the chopped onion in the oil for 6 minutes, then add the crushed garlic, grated ginger, cumin and turmeric and fry for 1 minute.

    Stir in the chopped tomatoes and simmer for 5 minutes, then add the potato and enough water to just cover.
  4. 4
    Cover and cook for 15 minutes until the potato is nearly tender, then stir in the peas and salt and cook for a further 5 minutes.

    Sprinkle over the garam masala, adjust the seasoning and serve with rice or bread.
