1Peel and dice the potato into 2cm chunks and set aside.

2Soften the chopped onion in the oil for 6 minutes, then add the crushed garlic, grated ginger, cumin and turmeric and fry for 1 minute.

3Stir in the chopped tomatoes and simmer for 5 minutes, then add the potato and enough water to just cover.

4Cover and cook for 15 minutes until the potato is nearly tender, then stir in the peas and salt and cook for a further 5 minutes.

5Sprinkle over the garam masala, adjust the seasoning and serve with rice or bread.
