Slow Cooker Vegetable Curry

The recipe

Instructions

    Put the chopped onion, garlic and ginger paste into the slow cooker.
  2. 2
    Add the diced sweet potato, cauliflower florets, chopped tomatoes, curry powder and turmeric, then stir well.

    Cover and cook on low for 6 hours, until the vegetables are tender.

    Stir in the coconut milk and peas, then cook on high for a further 15 minutes.

    Season to taste and serve with rice or naan.
