1Put the chopped onion, garlic and ginger paste into the slow cooker.

2Add the diced sweet potato, cauliflower florets, chopped tomatoes, curry powder and turmeric, then stir well.

3Cover and cook on low for 6 hours, until the vegetables are tender.

4Stir in the coconut milk and peas, then cook on high for a further 15 minutes.

5Season to taste and serve with rice or naan.
