    Halve and thinly slice the onions and put them in a large bowl. Add the finely chopped chilli, cumin, turmeric, garam masala and salt and scrunch together with your hands.

    Sprinkle over the flour and add just enough water to make a thick batter that clings to the onions.

    Heat the oil in a deep pan to 180C. Carefully lower in small handfuls of the mixture, a few at a time, and fry for 3-4 minutes until deep golden and crisp.

    Lift out with a slotted spoon and drain on kitchen paper. Cook the rest in batches and serve hot.
