Slow Cooker Chicken Curry

The recipe

Instructions

    Put the chicken thighs into the slow cooker along with the sliced onion, garlic and grated ginger.
  2. 2
    Add the chopped tomatoes, coconut milk, crumbled stock cubes and all the spices, then stir well to coat the chicken.

    Put the lid on and cook on Low for 8 hours until the chicken is cooked through and tender.
  4. 4
    Check that the chicken is piping hot all the way through with no pink meat, then break it up slightly with a spoon.

    Season to taste and serve with rice.
