1Put the chicken thighs into the slow cooker along with the sliced onion, garlic and grated ginger.

2Add the chopped tomatoes, coconut milk, crumbled stock cubes and all the spices, then stir well to coat the chicken.

3Put the lid on and cook on Low for 8 hours until the chicken is cooked through and tender.

4Check that the chicken is piping hot all the way through with no pink meat, then break it up slightly with a spoon.

5Season to taste and serve with rice.
