Cheese and Onion Quesadilla

    Finely slice the red onion and soften in a little of the oil for 4 minutes, then stir through the paprika.

    Scatter grated cheese, the cooked onion and finely sliced spring onion over two tortillas, then top each with a second tortilla.
  3. 3
    Wipe the pan, add a touch of oil and cook one quesadilla over a medium heat for 2 minutes until golden underneath.

    Flip carefully and cook the other side for 2 minutes until crisp and the cheese has melted.

    Repeat with the second quesadilla, then cut into wedges and serve.
