The recipe

Instructions

    Heat the oven to 200C. Brush the tortillas with a little oil, cut into triangles and bake for 7-8 minutes until crisp.

    Drain and rinse the black beans, then warm in a small pan with the chilli powder and a splash of water for 3 minutes.
  3. 3
    Pile the crisp tortillas into an ovenproof dish, scatter over the beans and grated cheese.

    Return to the oven for 4 minutes until the cheese has melted.

    Top with finely diced red onion, chopped tomato and spoonfuls of sour cream, then serve straight away.
