    Fry the diced chorizo in a large pot for 3 minutes until the oil runs out and it starts to crisp.

    Add the chopped onion, garlic and red pepper and cook for 5 minutes until softened.
  3. 3
    Stir in the paprika, then add the drained butter beans and cannellini beans, chopped tomatoes and crumbled stock cube.

    Simmer for 15 minutes until the sauce has thickened and everything is piping hot.

    Stir through the spinach until wilted, season to taste and serve with crusty bread.
