1Pat the fish fillets dry and season with the salt. Set out the flour on a plate, beaten egg in a bowl and breadcrumbs on a second plate.

2Coat each fillet in flour, then egg, then breadcrumbs, pressing the crumbs on well.

3Lightly brush or spray both sides with the cooking oil.

4Preheat the air fryer to 200C and lay the fillets in a single layer.

5Cook at 200C for 10-12 minutes, turning halfway, until the crumb is golden and the fish flakes easily and is piping hot throughout. Serve with lemon wedges.
