1Toss the diced beef shin in the flour with a little salt and pepper, then brown all over in a little oil in a hot pan for 4-5 minutes.

2Tip the beef into the slow cooker and add the chopped onion, carrots, potato and swede.

3Stir in the crumbled stock cubes, tomato puree, bay leaves and thyme, then pour over enough boiling water to just cover.

4Cover and cook on low for 8 hours, until the beef is fork-tender and the sauce has thickened.

5Remove the bay leaves, season to taste and serve hot.
