A proper sticky beef stew, costed to the penny and left to look after itself all day. Cheap shin turns meltingly tender in the slow cooker for pennies a bowl.

The recipe

    Toss the diced beef shin in the flour with a little salt and pepper, then brown all over in a little oil in a hot pan for 4-5 minutes.

    Tip the beef into the slow cooker and add the chopped onion, carrots, potato and swede.
  3. 3
    Stir in the crumbled stock cubes, tomato puree, bay leaves and thyme, then pour over enough boiling water to just cover.

    Cover and cook on low for 8 hours, until the beef is fork-tender and the sauce has thickened.

    Remove the bay leaves, season to taste and serve hot.
