A cool, creamy tuna pasta salad, costed to the penny. Made with storecupboard tuna and sweetcorn, it feeds the family for pennies and needs no oven.

Instructions

    Cook the pasta in boiling salted water until tender, then drain and rinse under cold water to cool it down.

    Drain the tuna and the sweetcorn well.
  3. 3
    Dice the cucumber and finely slice the spring onions.
  4. 4
    In a large bowl mix the mayonnaise with the lemon juice, salt and pepper.
  5. 5
    Fold in the cooled pasta, tuna, sweetcorn, cucumber and spring onion until everything is coated, then chill until ready to serve.
