The recipe

    Cook the rice according to the packet, drain and set aside.
  2. 2
    Fry the chopped onion and garlic in a little oil for 4 minutes, then stir in the drained black beans, chopped tomatoes, cumin and paprika and simmer for 5 minutes.

    Mix the rice through the bean mixture and season well.
  4. 4
    Slice the tops off the peppers and remove the seeds, then pack the filling into each one and top with grated cheese.
  5. 5
    Preheat the air fryer to 180C and cook the peppers for 20 minutes until soft and the cheese is melted and golden. Serve hot.
