    Heat the oven to 180C. Butter the bread, cut each slice into triangles and layer them into a buttered baking dish, scattering raisins between the layers.

    Whisk the eggs, milk and most of the sugar together into a custard and pour it evenly over the bread. Press the bread down and leave to soak for 10 minutes.

    Sprinkle the top with the last of the sugar and the cinnamon.
  4. 4
    Bake for 35-40 minutes until set with no wobble in the middle and golden on top. Serve warm.
