1Break the cauliflower into florets and boil for 6-8 minutes until just tender, then drain well and tip into an ovenproof dish.

2Melt the butter in a pan, stir in the flour and cook for 1 minute, then slowly whisk in the milk until smooth and thickened.

3Take off the heat and stir in most of the cheese, the mustder, salt and pepper until glossy.

4Pour the sauce over the cauliflower, scatter over the rest of the cheese and bake at 200C for 20 minutes until golden and bubbling.
