Instructions

    Break the cauliflower into florets and boil for 6-8 minutes until just tender, then drain well and tip into an ovenproof dish.

    Melt the butter in a pan, stir in the flour and cook for 1 minute, then slowly whisk in the milk until smooth and thickened.
  3. 3
    Take off the heat and stir in most of the cheese, the mustder, salt and pepper until glossy.
  4. 4
    Pour the sauce over the cauliflower, scatter over the rest of the cheese and bake at 200C for 20 minutes until golden and bubbling.
