    Heat the oven to 200C and line a baking tray. Rub the butter into the self-raising flour and baking powder with your fingertips until it looks like breadcrumbs.

    Stir in most of the grated cheese, the snipped chives and the mustard, then pour in the milk and bring it together into a soft dough.
  3. 3
    Pat out to about 3cm thick on a floured surface and cut into 8 rounds. Sit them on the tray and brush the tops with beaten egg, then scatter over the last of the cheese.

    Bake for 14-16 minutes until risen and golden. Cool on a rack for a few minutes and serve warm.
