Eggs baked with grated courgette, onion and cheese into a golden set frittata. Great hot or cold and a brilliant way to use up cheap veg.

Cheese and Courgette Frittata

The recipe

Instructions

    Heat the oil in an ovenproof frying pan and soften the chopped onion for 5 minutes.

    Add the coarsely grated courgette and cook for 4 minutes until any water has cooked off.
  3. 3
    Beat the eggs with the salt, pepper and most of the cheese, then pour into the pan and stir once.
  4. 4
    Cook over a low heat for 5 minutes until the base is set, then scatter over the rest of the cheese.
  5. 5
    Finish under a hot grill or in a 190C oven for 6 to 7 minutes until set and golden, then cut into wedges to serve.
