1Rub the butter into the flour and salt until crumbly, add a splash of cold water and bring together into a dough, then chill for 15 minutes.

2Boil the diced potato for 5 minutes until just soft, drain and cool, then mix with the finely chopped onion, grated cheese and pepper.

3Roll the pastry out, cut into four circles, pile the filling on one half of each and fold over, crimping the edges to seal.

4Brush with beaten egg and bake at 200C for 25 minutes until deep golden and crisp.
