The recipe

    Rub the butter into the flour and salt until crumbly, add a splash of cold water and bring together into a dough, then chill for 15 minutes.

    Boil the diced potato for 5 minutes until just soft, drain and cool, then mix with the finely chopped onion, grated cheese and pepper.
  3. 3
    Roll the pastry out, cut into four circles, pile the filling on one half of each and fold over, crimping the edges to seal.
  4. 4
    Brush with beaten egg and bake at 200C for 25 minutes until deep golden and crisp.
