The recipe

    Heat the oven to 220C (200C fan) and flour a baking tray. Rub the cold butter into the flour and baking powder until it looks like breadcrumbs.

    Stir in three-quarters of the grated cheese and the mustard. Beat the egg with the milk, then pour in most of it and bring together into a soft, slightly sticky dough.

    Pat out on a floured surface to about 3cm thick and cut out 8 rounds, pushing straight down with the cutter.

    Place on the tray, brush the tops with the last of the egg and milk, and scatter over the remaining cheese.

    Bake for 12-15 minutes until well risen and golden. Cool a little and serve warm, split and buttered.
