Crisp, cheesy homemade straws made from a quick rubbed-in dough, costed to the penny. Far cheaper than the shop-bought box and they fill a tin for pennies.

Cheese Straws

The recipe

Instructions

  1. 1
Heat the oven to 200C (180C fan) and line a baking tray with paper. Rub the cold butter into the flour and salt with your fingertips until it looks like fine breadcrumbs.
  2. 2
Stir in the grated cheese and mustard, then add most of the beaten egg (save a little for glazing) and bring together into a firm dough.
  3. 3
Roll out on a floured surface to about 5mm thick and cut into long strips about 1cm wide. Twist each strip a couple of times and lay on the tray.
  4. 4
Brush with the reserved egg and bake for 10-12 minutes until golden and crisp.
  5. 5
Cool on the tray for a few minutes, then transfer to a rack. Store in an airtight tin.
