1Crack the eggs into a bowl, add the milk and a good pinch of salt and pepper, then beat well.

2Melt half the butter in a non-stick pan over a low heat, pour in the eggs and stir gently and constantly.

3When the eggs are almost set but still glossy, fold through the grated cheese and take off the heat — they will finish cooking in the pan.

4Toast the bread and spread with the remaining butter.

5Pile the soft eggs onto the toast, add a final grind of pepper and serve straight away while hot.
