1Drain and rinse the chickpeas, then tip into a bowl and roughly mash with a fork, leaving some texture.

2Stir in the mayonnaise, curry powder, lemon juice and a pinch of salt.

3Mix in the finely chopped red onion.

4Taste and add a little more curry powder or salt if needed.

5Spread thickly onto the bread, top with a second slice and cut each sandwich in half to serve.
