    Drain and rinse the chickpeas, then tip into a bowl and roughly mash with a fork, leaving some texture.

    Stir in the mayonnaise, curry powder, lemon juice and a pinch of salt.
  3. 3
    Mix in the finely chopped red onion.
  4. 4
    Taste and add a little more curry powder or salt if needed.
  5. 5
    Spread thickly onto the bread, top with a second slice and cut each sandwich in half to serve.
