1Lower the eggs into boiling water and simmer for 9 minutes, then drain and cool under cold running water.

2Peel the eggs and mash in a bowl with the mayonnaise, mustard and finely sliced spring onion.

3Season well with salt and pepper.

4Lightly butter the bread, spread the egg mayo over two slices and top with the others.

5Cut in half and serve, or wrap for a packed lunch.
