    Lower the eggs into boiling water and simmer for 9 minutes, then drain and cool under cold running water.

    Peel the eggs and mash in a bowl with the mayonnaise, mustard and finely sliced spring onion.

    Season well with salt and pepper.
  4. 4
    Lightly butter the bread, spread the egg mayo over two slices and top with the others.

    Cut in half and serve, or wrap for a packed lunch.
