1Slice the halloumi and fry in half the oil over a medium-high heat for 2 minutes each side until golden, then set aside.

2Add the rest of the oil and fry the eggs until the whites are set firm.

3Warm the tortillas in a dry pan for a few seconds each.

4Lay a few slices of tomato and a handful of spinach down the middle of each tortilla, top with halloumi and a fried egg and season with pepper.

5Fold in the sides, roll up and serve warm.
