The recipe

Instructions

    Finely chop the onion and soften it in the oil in a saucepan over a medium heat for 5 minutes.

    Stir in the tomato puree and cook for 1 minute, then add the chopped tomatoes and a splash of water.

    Drain and rinse the cannellini beans, tip them in with the sugar and a little salt and pepper, then simmer gently for 8-10 minutes until thick.

    Towards the end, toast the bread and spread with butter.

    Pile the beans onto the buttered toast and serve straight away.
