1Heat the oven to 200C. Prick the potatoes all over, rub with the olive oil and a little salt, and bake directly on the shelf for about 75 minutes until crisp outside and fluffy inside.

2Drain the tuna and the sweetcorn well.

3Mix the tuna and sweetcorn with the mayonnaise and finely sliced spring onion, then season with pepper.

4Split the hot potatoes open and fluff up the insides with a fork.

5Pile in the tuna mix, scatter with grated cheese and serve.
