    Heat the oven to 200C. Prick the potatoes all over, rub with the olive oil and a little salt, and bake directly on the shelf for about 75 minutes until crisp outside and fluffy inside.

    Drain the tuna and the sweetcorn well.
  3. 3
    Mix the tuna and sweetcorn with the mayonnaise and finely sliced spring onion, then season with pepper.

    Split the hot potatoes open and fluff up the insides with a fork.
  5. 5
    Pile in the tuna mix, scatter with grated cheese and serve.
