The recipe

Instructions

    Prick the potatoes all over, rub with a little salt and bake in a 200C oven for about 70 minutes until crisp outside and fluffy inside.

    Meanwhile simmer the drained beans with the chopped tomatoes and paprika in a small pan for 10 minutes until thick and saucy.

    Split the cooked potatoes open and fluff the insides with a fork, then add a knob of butter to each.
  4. 4
    Spoon the beans generously over the top.
  5. 5
    Scatter with grated cheese so it melts into the hot beans, and serve straight away.
