1Heat the oven to 150C. Butter an ovenproof dish and tip in the rice and sugar.

2Pour over the milk and stir, then dot the top with the rest of the butter and dust with cinnamon.

3Bake for about 2 hours, stirring once after the first half hour, until the rice is tender and a golden skin has formed on top.

4Leave to stand for 5 minutes, then spoon into bowls and serve warm.
