    Thinly slice the red onion, put it in a small bowl with the vinegar and a pinch of salt and leave to lightly pickle for 10 minutes.

    Cut the cheese into thick chunky wedges.
  3. 3
    Slice the bread and arrange it on two plates with the cheese.
  4. 4
    Add a handful of torn lettuce and sliced tomato to each plate, plus a little pile of the pickled onion.

    Serve with a spoonful of mustard on the side for spreading.
