1Thinly slice the red onion, put it in a small bowl with the vinegar and a pinch of salt and leave to lightly pickle for 10 minutes.

2Cut the cheese into thick chunky wedges.

3Slice the bread and arrange it on two plates with the cheese.

4Add a handful of torn lettuce and sliced tomato to each plate, plus a little pile of the pickled onion.

5Serve with a spoonful of mustard on the side for spreading.
