1Toss the diced beef shin in the flour with a little salt and pepper, then brown it in a hot pan in a splash of oil until well coloured all over.

2Tip the beef into the slow cooker with the sliced onion, chopped carrot and cubed potato.

3Add the garlic, tomato puree, chopped tomatoes, crumbled stock cubes and mixed herbs, then pour over enough water to just cover.

4Stir well, put the lid on and cook on Low for 8 hours until the beef is fork-tender and the sauce has thickened.

5Check the seasoning and serve piping hot with bread or mash to mop up the gravy.
