The recipe

    Toss the diced beef shin in the flour with a little salt and pepper, then brown it in a hot pan in a splash of oil until well coloured all over.

    Tip the beef into the slow cooker with the sliced onion, chopped carrot and cubed potato.
  3. 3
    Add the garlic, tomato puree, chopped tomatoes, crumbled stock cubes and mixed herbs, then pour over enough water to just cover.
  4. 4
    Stir well, put the lid on and cook on Low for 8 hours until the beef is fork-tender and the sauce has thickened.

    Check the seasoning and serve piping hot with bread or mash to mop up the gravy.
