Slow Cooker Sausage and Bean Casserole

☆☆☆☆☆ 0 · 0 reviews · Write a review

Banger-and-bean comfort food that practically cooks itself. Cheap sausages turn meltingly good over a few hours, and a tin of beans bulks it out so it feeds the whole table for less.

The recipe

Instructions

  1. 1
Brown the sausages in a dry pan for a few minutes to colour them, then add to the slow cooker. (Optional but worth it.)
  2. 2
Add the sliced onion, carrot, chopped potato, drained beans, chopped tomatoes, tomato puree, herbs, Worcestershire sauce and crumbled stock cube.
  3. 3
Pour in a splash of water to just cover, stir, and cook on LOW for 6 hours (or HIGH for 3).
  4. 4
Season and serve with crusty bread or mash to mop up the sauce.
