Tomato Soup with Cheese Toastie

The recipe

Instructions

    Soften the chopped onion and garlic in a little butter in a pan for 5 minutes.
  2. 2
    Add the chopped tomatoes, crumbled stock cube, sugar and 300ml of water, then simmer for 15 minutes.

    Blend the soup until smooth, season to taste and keep warm.
  4. 4
    Butter the bread on the outside, fill with grated cheese and fry in a hot pan for 2 to 3 minutes each side until golden and melting.

    Cut the toastie in half and serve alongside a bowl of hot soup for dunking.
