1Soften the chopped onion and garlic in a little butter in a pan for 5 minutes.

2Add the chopped tomatoes, crumbled stock cube, sugar and 300ml of water, then simmer for 15 minutes.

3Blend the soup until smooth, season to taste and keep warm.

4Butter the bread on the outside, fill with grated cheese and fry in a hot pan for 2 to 3 minutes each side until golden and melting.

5Cut the toastie in half and serve alongside a bowl of hot soup for dunking.
