The recipe

    Pat the fish dry, season and dust lightly in the flour. Heat the oil and fry for 3-4 minutes each side until golden and cooked through, then lift onto a plate.

    Slice the onion, carrot, green pepper and chilli into thin strips.
  3. 3
    In the same pan cook the vegetables with the garlic and allspice for 3-4 minutes until just softened but still with some bite.

    Pour in the vinegar and a splash of water and let it bubble for 2 minutes to make a tangy dressing.

    Spoon the hot peppery dressing over the fried fish and serve with rice and peas.
