    Wash and chop the greens roughly.

    Heat oil in a wide pan. Soften chopped onion 6 minutes.
  3. 3
    Add garlic, chopped tomato, scotch bonnet (whole — for flavour, not heat), thyme. Cook 3 minutes.

    Pile in greens with coconut milk. Cover, cook 5 minutes until wilted.

    Stir well, season with black pepper and salt. Serve with rice and any protein.
