    Soak saltfish overnight, changing water. Boil 15 minutes, drain, flake.

    Boil potatoes 18 minutes until tender. Drain, mash dry without milk or butter.

    Mix mashed potato with flaked saltfish, chopped spring onions, garlic, chopped scotch bonnet, herbs, beaten egg, pepper.

    Form into 8 patties. Dust with flour.

    Heat oil in a frying pan. Cook patties 3 minutes per side until deep golden. Drain on paper. Eat with hot pepper sauce.
