1Soak saltfish overnight, changing water. Boil 15 minutes, drain, flake.

2Boil potatoes 18 minutes until tender. Drain, mash dry without milk or butter.

3Mix mashed potato with flaked saltfish, chopped spring onions, garlic, chopped scotch bonnet, herbs, beaten egg, pepper.

4Form into 8 patties. Dust with flour.

5Heat oil in a frying pan. Cook patties 3 minutes per side until deep golden. Drain on paper. Eat with hot pepper sauce.
