The recipe

Instructions

    Blend the onion, garlic, chilli, allspice, thyme, cinnamon, soy sauce, brown sugar and the juice of the lime to a rough paste.

    Rub the paste all over 8 bone-in chicken thighs and leave to marinate for at least 20 minutes, or overnight if you can.

    Heat the oven to 200C. Lay the thighs skin-side up in a roasting tin.

    Roast for 30-35 minutes until charred at the edges and cooked right through with the juices running clear.
  5. 5
    Rest for a few minutes, then serve with rice and peas.
