    Slice the beef thinly. Mix with 1 tbsp soy and 1 tbsp cornstarch — coat thoroughly. Rest 5 minutes.

    Cut the broccoli into florets. Blanch in boiling water for 90 seconds, drain.

    Heat oil in a wok. Stir-fry beef in batches for 1 minute until just browned. Set aside.

    In the same wok, add garlic and ginger for 20 seconds. Add stock, remaining soy, oyster sauce and sugar. Bubble.

    Mix remaining cornstarch with water. Stir into sauce. Add broccoli and beef, toss for 1 minute. Serve over rice.
