    Heat the oil in a large frying pan and soften the sliced onion and peppers over a medium heat for 10 minutes.

    Add the crushed garlic and paprika and cook for another minute until fragrant.
  3. 3
    Pour in the chopped tomatoes with the salt and pepper and simmer for 12-15 minutes until thick and jammy.

    Beat the eggs, pour them into the pan and stir gently over a low heat for 3-4 minutes until softly set and cooked through.
  5. 5
    Take off the heat, check the seasoning and serve straight from the pan with bread.
