1Heat the oil in a large frying pan and soften the sliced onion and peppers over a medium heat for 10 minutes.

2Add the crushed garlic and paprika and cook for another minute until fragrant.

3Pour in the chopped tomatoes with the salt and pepper and simmer for 12-15 minutes until thick and jammy.

4Beat the eggs, pour them into the pan and stir gently over a low heat for 3-4 minutes until softly set and cooked through.

5Take off the heat, check the seasoning and serve straight from the pan with bread.
