The recipe

    Boil the potatoes for 12 minutes until tender. Boil the eggs for 8 minutes. Blanch the green beans for 3 minutes.

    Halve the warm potatoes and toss with vinaigrette while warm — they soak it up.
  3. 3
    Whisk the dressing: olive oil, vinegar, mustard, salt and pepper.
  4. 4
    Arrange everything on a big platter: lettuce base, then potato, beans, sliced tomatoes, halved eggs, olives, tuna, anchovies and red onion.

    Drizzle with remaining dressing. Serve immediately while everything is just at room temperature.
