    Soak the dried mushrooms in 200ml hot water for 15 minutes. Save the liquid.

    Sauté the chopped onion in butter for 6 minutes. Add garlic and chopped fresh mushrooms.

    Cook on high until the mushrooms release water and it cooks off — 10 minutes.

    Add wine, then stock and the strained mushroom soaking liquid. Simmer 15 minutes.

    Blend until smooth. Stir in the cream and thyme leaves. Season and serve with a final swirl of cream.
