Upside-down caramelised apple tart that supposedly came from a kitchen mistake. Buttery puff pastry, deep-amber caramel, soft apples — a flip on the plate and dinner ends in applause.

The recipe

Instructions

    Peel, core and quarter the apples. Heat the butter and sugar in an oven-proof pan over medium heat until amber caramel forms.

    Add the apples to the caramel, cut-side up, packed tightly. Cook 5 minutes, basting.
  3. 3
    Lay the pastry sheet over the top, tucking the edges down inside the pan around the apples.

    Bake at 200°C for 30 minutes until the pastry is deep golden and crisp.

    Rest 5 minutes, then carefully flip onto a serving plate (mind the hot caramel). Serve warm with cream.
