The recipe

    Heat the oil in a large pot and brown the chopped bacon for 4-5 minutes until the fat runs.

    Add the diced onion, carrot and crushed garlic and cook gently for 5 minutes until softened.
  3. 3
    Stir in the rinsed lentils, crumbled stock cube, bay leaf, thyme and pepper, then pour in enough water to cover by a couple of centimetres.

    Bring to a simmer, part-cover and cook for 35-40 minutes, stirring now and then, until the lentils are tender and the bacon is cooked through.
  5. 5
    Fish out the bay leaf, top up with a splash of water if it looks dry, season to taste and serve in deep bowls.
