The recipe

    Heat the oven to 160C fan. Rub an ovenproof dish all over with the cut garlic, then grease it with the butter.

    Peel and slice the potatoes very thinly, around 3mm, and pat dry with a clean tea towel.
  3. 3
    Warm the cream, milk, crushed garlic, thyme, salt and pepper in a pan until steaming but not boiling.
  4. 4
    Layer the potatoes in the dish, pour over the warm cream and press down so they are submerged.
  5. 5
    Scatter the grated cheese on top and bake for 65-70 minutes until a knife slides through easily and the top is golden. Rest 10 minutes before serving.
