1Drain the sweetcorn well and tip into a bowl.

2Melt the butter in an ovenproof pan, add the corn and cook for 3-4 minutes to warm through.

3Stir in the mayonnaise, sugar, a good grind of pepper and half the sliced spring onion.

4Scatter the grated mozzarella over the top and grill or bake at 200C for 8-10 minutes until melted, bubbling and golden.

5Finish with the remaining spring onion and serve hot for scooping.
