Baked black bean enchiladas, costed to the penny. Rolled tortillas stuffed with spiced beans under a tomato sauce and bubbling cheese, meat-free and cheap.

    Heat the oven to 190C. Soften the chopped onion in oil for 5 minutes, then add the garlic, cumin and paprika.

    Make the sauce by simmering the chopped tomatoes, tomato puree, crumbled stock cube and half the onion mix for 10 minutes, then blend or mash smooth.

    Mash the drained black beans with the rest of the onion mix and a splash of water to make the filling.

    Spoon the beans down each tortilla, roll up and lay seam-down in a baking dish. Pour over the sauce and scatter with cheese.

    Bake for 20 minutes until the cheese is golden and bubbling, then serve.
