1Heat the oven to 190C. Soften the chopped onion in oil for 5 minutes, then add the garlic, cumin and paprika.

2Make the sauce by simmering the chopped tomatoes, tomato puree, crumbled stock cube and half the onion mix for 10 minutes, then blend or mash smooth.

3Mash the drained black beans with the rest of the onion mix and a splash of water to make the filling.

4Spoon the beans down each tortilla, roll up and lay seam-down in a baking dish. Pour over the sauce and scatter with cheese.

5Bake for 20 minutes until the cheese is golden and bubbling, then serve.
