Chicken Quesadillas

    Cut the chicken thighs into small pieces and fry in the oil for 6-7 minutes until cooked through with no pink meat.

    Add the sliced onion, sliced red pepper, garlic, cumin and paprika and cook for 4-5 minutes until soft.
  3. 3
    Lay a tortilla in a dry frying pan, scatter over grated cheese and some of the chicken mix, then top with another tortilla.

    Cook for 2 minutes each side until golden and the cheese has melted, then repeat with the rest.

    Cut each quesadilla into wedges and serve hot.
