    Soften the chopped onion in a little oil in a wide frying pan for 5 minutes, then stir in the garlic, cumin and paprika.

    Add the chopped tomatoes and drained black beans and simmer for 8 minutes until thickened and saucy.

    Make four dips in the sauce and crack an egg into each one. Cover and cook gently for 5-6 minutes until the whites are set and the yolks are done to your liking.

    Warm the tortillas in a dry pan or the oven.

    Scatter the eggs with grated cheese and serve over the warm tortillas.
