    Heat the oven to 190C. Finely chop the tomatoes, half the red onion and the coriander, then mix with a squeeze of lime and a pinch of salt to make a quick salsa.

    Drain and rinse the black beans and toss with the paprika. Spread the tortilla chips over a baking tray.
  3. 3
    Scatter over the beans, the rest of the sliced onion and most of the grated cheese. Bake for 8-10 minutes until the cheese is melted.

    Spoon the fresh salsa over the top, scatter with a little more coriander and serve straight away.
