    Slice the pepper, chop the spring onion, chilli and coriander. Mix with the grated cheese.
  2. 2
    Heat a dry pan on medium. Place a tortilla in, scatter half the cheese mixture over half of it.
  3. 3
    Fold the tortilla in half. Cook 2 minutes until golden underneath, then flip carefully and cook 2 more minutes until cheese is fully melted.
  4. 4
    Repeat with the second tortilla. Slide onto a board and cut into wedges.
  5. 5
    Serve with salsa and sour cream for dipping. Eat with hands.
